Tranches d'arbre à pain frites is a traditional snack that is typically prepared using only three basic ingredients: breadfruit, salt and coconut oil
Ingredients:
1 large breadfruit
fine sea salt, to season
1kg coconut oil for deep frying
Method:
To prepare a breadfruit, peel it, quarter it, remove the inedible core then slice into thin pieces.
Heat the coconut oil in a deep frier, wok or large saucepan. Once the oil is hot (about 180°C) pat the breadfruit slices dry on kitchen paper then drop into the hot oil. Fry until the breadfruit is golden (about 10 minutes) then remove from the oil and dry on kitchen paper.
Arrange on a serving dish, salt lightly and serve.
This can be eaten by itself as a snack or it can be served as a carbohydrate accompaniment to other dishes.
