Ultimate Box Mix Strawberry Cake: An American recipe for a strawberry layer cake based on a strawberry cake mix that's finished with strawberry cream cheese frosting (icing).

Ingredients:

For the Cake:
1 batch (500g) copycat boxed strawberry cake mix (or 1 box [18 1/4 oz] strawberry cake mix)
415g packet of frozen strawberries in syrup, thawed and puréed
4 large eggs
120ml vegetable oil
60ml water

For the Strawberry Cream Cheese Frosting:
4 tbsp butter, softened
225g cream cheese, softened (or you can use my home-made cream cheese recipe to prepare your own)
4 tbsp strawberries in syrup, puréed
1/2 tsp strawberry extract
875g icing sugar

fresh strawberries, sliced, to garnish

Method:

Add the cake mix to a bowl then mix in the strawberries, eggs, oil and water. Beat with an electric whisk until smooth then divide the batter between two greased and floured 22cm diameter sandwich tins.

Transfer to an oven pre-heated to 170°C and bake for about 20 minutes, or until a wooden skewer inserted into the centre of the cakes emerges cleanly.

Allow the cakes to cook in the tins for 10 minutes then turn out onto a wire rack to cool completely.

For the frosting, cream together the butter and cream cheese in a bowl. Add 4 tbsp of the strawberry purée along with the strawberry extract.

Gradually add the icing sugar, about 50g at a time, beating until smooth after each addition. Continue adding sugar to the frosting until you have a smooth, just spreadable consistency.

Spread the frosting between the layers of cake and sandwich together. Use the remaining frosting to cover the sides and top of the cake.

Garnish with sliced strawberries, cut into wedges and serve.
