This is a classic (if rather unusual) pudding from the province of Ulster, Northern Ireland that's made from a porridge base flavoured with honey, cinnamon and lemon zest
Pour the milk into a saucepan and bring just to a boil. Sprinkle the oats over the milk, bring back to a boil then reduce to a brisk simmer and cook, stirring constantly, for 5 minutes.
Now stir in the sugar, honey, butter, lemon zest and cinnamon. Take the mixture off the heat then beat in the egg yolks.
Add the egg whites to a clean and dry bowl then fold into the oat mixture. Turn into a well-buttered 1.5l pudding basin. Cover this with a lid or a piece of well-buttered greaseproof (waxed) paper. Cover with a double layer of kitchen foil and tie securely in place.
Sit the pudding in a steamer (or on an upturned plate in a saucepan) and steam over (or in) a pan of boiling water for about 150 minutes (top up the water as needed to ensure the pan does not boil dry).
Invert the pudding onto a warmed dish and serve immediately, accompanied by warmed honey and cream.
