Ingredients:
75g mealie meal (cornmeal)
150g plain flour
100g sugar
pinch of salt
2 tsp baking powder
450ml cold water
Method:
Add the mealie meal to a small bowl, moisten with a little water then place in a steamer basket and cook, stirring occasionally with a fork, until the mixture forms crumbs.
Turn into a larger bowl then mix in all the remaining ingredients and combine to form a firm but pliable dough. Take a large aluminium pot or a Dutch oven and place a little water in the base. Invert a plate in the base (or add a bamboo steamer, you can also add criss-crossed chopsticks or pieces of wood to he base) then bring the water to a boil (the plate or steamer basket prevents the dough from falling into the boiling water if it falls off).
As soon as the water boils take a handful of the dough and paste this against the side of the pot. Continue this process until all the dough has been used up.
Cover and cook for about 30 minutes.
Typically this is served with milk or meat stews, but also makes and acceptable accompaniment to tea.
