I've been looking for ways to add flavour to tuna and to extend it so a tin of tuna will last up to three days. Rather than the usual mayonaise I used Greek-style yoghurt for binding and the excellent wild green garlic mustard for flavouring.
Ingredients
1 tin of tuna, drained
50g mature cheddar cheese, grated
1/2 small onion, finely diced
6 young garlic mustard leaves, finely chopped
2 garlic cloves, crushed and minced
1/2 carrot, grated
6 tbsp Greek-style yoghurt
salt and freshly-ground black pepper, to taste
Method:
Mash the tuna in a bowl then blend in the onion, cheese and carrot. Mash until evenly combined then work in the yoghurt.
Season to taste with salt and freshly-ground black pepper then stir through the garlic and garlic mustard leaves.
