Ingredients:
225g self-raising flour
115g margarine
115g butter
1/2 tsp mixed spice
1 tbsp black treacle
225g mixed dried fruit
1 tsp bicarbonate of soda
250ml strong redbush/rooibos tea
Method:
Combine the margarine, redbush tea, fruit and treacle in a saucepan and bring to a boil. Allow to simmer for 3 minutes then take off the heat and set aside to cool a little.
Sift the flour, sugar and mixed spice into a bowl then pour in the mixture from the pan and beat well to combine. Add the bicarbonate of soda and mix well.
Turn into a 1kg loaf tin and place in an oven pre-heated to 180°C and bake for about 90 minutes, or until the top of the cake is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 5 minutes then turn onto a wire rack to cool completely.
