This is a commonly-used ingredient in Southwestern USA and Tex-Mex cookery, but may not be easily available elsewhere. This recipe allows your to create a copycat version at home.
Ingredients:
4 medium -sized fully ripe tomatoes, diced (plum tomatoes for preference)
2 green chillies (such as Anaheim or Hatch), finely chopped
1 garlic clove, minced
½ tsp dried oregano, crumbled
Salt, to taste
1 tbsp lime juice (optional)
Method:
Combine all ingredients in a saucepan and simmer for 10–15 minutes, until the tomatoes soften and the flavours blend together.
Take off the heat and allow to cool. Either use immediately, or store in the refrigerator for up to five days.
