Ingredients:
For the Toffee Apples:
100ml water
225g granulated sugar
2 tbsp golden syrup (corn syrup)
30g unsalted butter
450g cooking apples, peeled, cored and cut into wedges
450g eating apples, cored, peeled and cut into wedges
For the Crumble Topping:
150g plain flour
150g unsalted butter
150g demerara sugar
Method:
Combine the water and sugar for the toffee in a small pan and slowly bring to a boil. Once all the sugar has dissolved, add the syrup and the butter then bring back to a boil, stirring constantly.
Reduce the heat, add the apple pieces, and continue to cook, stirring gently, until the fruit is just soft. Take off the heat and turn the toffee apple mixture into the base of an ovenproof dish.
For the crumble mix, combine the flour and sugar in a bowl. Dice the butter and add to the bowl then rub in with your fingers until the mixture resembles coarse crumbs. Spoon the resultant crumble evenly over the apple mixture, ensuring the entire top of the dish is covered.
Transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until the top is golden brown. Serve hot, accompanied by vanilla custard.
