Thyme Bomb Drummers

Thyme Bomb Drummers is a modern British recipe for a classic dish of chicken drumsticks marinated in a mix of tomato puree, white wine vinegar, Worcestershire sauce, mustard, oil and thyme that are either baked or barbecued and make and excellent snack for Bonfire Night. Ingredients:

16 chicken drumsticks
3 tbsp tomato purée
2 tsp dried thyme
1 tbsp white wine vinegar
3 tbsp Worcestershire sauce
1 tbsp prepared mustard
3 tbsp olive oil
lemon wedges, to garnish

Method:

Take a sharp knife and cut two deep slashes in each drumstick. Now whisk together the tomato purée, thyme, white wine vinegar, Worcestershire sauce, mustard and olive oil in a bowl to make the marinade. Place the drumsticks in a large bowl, pour over the marinade then cover and refrigerate for 4 hours.

After this time, remove the drumsticks from the marinade and either bake or grill for about 25 minutes, or until tender and cooked through.

Garnish with lemon wedges and serve with Gunpowder mash stuffed potato skins.
