Three Cheese Ranch Dressing is a traditional American recipe for a classic sauce often used as an accompaniment to chicken and salads that's made with Parmesan, Cheddar and Pecorino Romano cheeses. Ingredients:
6 tbsp mayonnaise
1 fat garlic clove, crushed
a small bunch of flat-leaf parsley, finely chopped
a small bunch of dill leaves, finely chopped
a large pinch of onion powder
2 generous squeezes of lemon juice
1 tbsp finely-grated Parmesan cheese
2 tbsp freshly-grated Cheddar cheese
1 tbsp finely-grated Pecorino Romano cheese
4 tbsp olive oil
1/2 tsp Annatto Seeds
salt and freshly-ground black pepper, to taste
Method:
Begin with the annatto oil. Heat the olive oil in a small pan and when hot add the annatto seeds. Fry, stirring constantly, for about 5 minutes, or until the oil takes on a deep colour. Take off the heat and set aside to cool then strain to remove the annatto seeds.
To make the ranch dressing simply combine all the ingredients together in a bowl (only add 2 tbsp of the annatto oil).
Stir to combine then season to taste and set aside in the refrigerator to chill until needed.
