Three-berries Rhubarb Sauce is a modern British recipe for a classic sweet sauce made from a mix of strawberries, blueberries, raspberries and rhubarb sweetened with honey or maple syrup. Ingredients:
180g strawberries, hulled
180g blueberries (or bilberries)
180g raspberries
200g rhubarb, chopped
120ml honey or maple syrup
Method:
Combine the fruit in a blender and purée until smooth (add a little water, as necessary to make the process easier) then transfer to a saucepan. Bring the mixture to a gentle boil then immediately take off he heat.
Set aside to cool then press the mixture through a fine-meshed sieve to remove the seeds. Stir in the honey or maple syrup and use as a dressing or sauce for waffles or ice cream. It will keep in the refrigerator for a couple of days.
