Ingredients:

900g wild boar meat, cubed
1 onion, chopped
2 carrots, scraped and chopped
2 potatoes, peeled and diced
3 tbsp butter
4 tbsp plain flour
1 tsp paprika
salt and freshly-ground black pepper, to taste
250ml beef stock
1 bay leaf
250ml sour cream

Method:

Melt the butter in a pan, add the onions and fry for about 8 minutes, or until golden brown. Scatter the flour over the top then stir to combine into a roux. Fry for 1 minute then scatter the paprika over the top and stir to mix.

Add the meat and fry, stirring constantly, until lightly browned all over. Now stir-in the beef stock, add the potatoes, carrot and bay leaf and season with salt and black pepper. Bring to a simmer, cover and cook for about 25 minutes, or until the meat is tender and the vegetables are cooked through (add more water or stock, as needed, to ensure the meat remains covered).

Add the sour cream and stir to combine. Immediately take off the heat and serve ladled into warmed soup bowls.
