Method:

Add the peppercorns and tarragon to a sealable jar (a Kilner jar is ideal), pour over the vinegar then seal and refrigerate for two weeks.

After this time, pass through a fine-meshed sieve, discard the herbs and spices then seal the resultant vinegar in sterilized bottles.
