Talétalé (Banana Fritters) is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic snack made from a blend of bananas and maize flour sweetened in sugar that are fried in oil before serving. Ingredients:
1kg ripe bananas
100g (about) wheat flour or maize flour
4 tbsp sugar
oil for frying
pinch of salt
Method:
Peel the bananas, slice into a bowl and mash. Use your hands to knead the mixture until smooth then work the salt and sugar and add enough wheat or maize flour to bring the mixture together as a dough.
Tear off pieces of the mixture and shape into walnut-sized balls.
Heat oil to a depth of 3cm in a wok or deep pan. Add the banana fritters and cook, turning frequently, for about 5 minutes or until nicely browned and cooked through. Drain on kitchen paper and serve either hot or cold.
