Ingredients:
enough fresh sweet vernal grass to fill your container
vodka to cover
Method:
Making this infusion is simplicity itself. You need a sealable jar which you need to pack full with the sweet vernal grass.
Pour in enough vodka to fill the container and cover the grass. Stopper securely to seal then set aside to infuse for two weeks. Do not infuse for more than this or the mixture will become bitter.
Decant the vodka into clean bottles (leaving the grass behind) add a single long leaf to the bottle and seal.
Leaving a single grass leaf in the bottle is the signature of Polish Żubrówka which is made with Hierochloe odorata, Bison grass, which is rare in Britain. Sweet Vernal Grass vodka infusion is the closest we can come to the Polish classic.
