Sweet Potato Fufu

Fufus are classic West African thick pastes or porridges made to accompany sticky stews. They are typically made from flour pastes in water but can also be made from cooked and mashed root vegetables, as is the case in this classic Nigerian version.

Ingredients:

1.2kg white sweet potatoes (unpeeled)
1 tbsp butter
salt and freshly-ground black pepper, to taste

Method:

Add the sweet potatoes to a pan of lightly-salted water, bring to a boil and cook until soft (about 35 minutes). Drain then allow to cool until they can be handled then peel.

Place in a bowl along with the butter and mash until soft.

Season with salt and black pepper then form into balls and serve immediately with your favourite stew.
