Ingredients:
2-3 extra-ripe plantains (skin should be yellow with many black spots)
1/2 cup vegetable oil or neutral cooking oil for frying
Pinch of salt (optional)
Method:
Peel the plantains, then slice the plantains at a bias into 2cm thick pieces.
Set a large, deep, frying pan over medium heat. Add in oil to a depth of 1cm.
Once the oil is hot add in the plantain pieces as a single layer. Fry for about 2–3 minutes per side, until nicely caramelized, carefully flipping them over and cooking for a further 2–3 minutes on the other side.
Once cooked to your liking, remove with a slotted spoon and drain on kitchen paper.
