Sua pofo is a labour-intensive sweet dessert made from cassava starch, water, coconut cream, and sugar, stirred until it forms shiny lumps.

Ingredients:

240g cassava starch
250ml water
250ml rich coconut cream
100g sugar

Method:

In a sturdy saucepan dissolve the cassava starch in the water.

Set over medium heat and cook, stirring constantly, until the mixture thickens.

When it becomes very thick pour in the coconut cream and keep stirring.

Add sugar to taste and continue cooking, stirring, until the mixture forms shiny lumps.

Serve warm.

Note that using too much water to begin with can prevent the mixture from becoming lumpy.
