Sua Alaisa (Samoan-style Rice Pudding)

Ingredients:

300g of washed white rice
milk, as needed
water, as needed
400g tin coconut milk OR coconut cream
Citrus leaves (optional)
Vanilla extract
sugar, to taste

Method:

Take a medium-sized saucepan and fill 3/4 of the way up with half water and half milk.

Add in the rice with a little vanilla extract and sugar to taste.

Set over high heat and bring to a boil. If using young citrus leaves as a flavouring add these now.

Bring to a boil and cook briskly for about 10 minutes, until the rice is half done.

Reduce the heat to low then add in the coconut cream or coconut milk.

Continue cooking at a gentle simmer for 15 minutes.

Take off the heat and set aside to rest for 20 minutes so the rice pudding can thicken.

Serve accompanied by fresh bread and butter.
