Stir-fried Eggs with Sha Ren is a traditional Chinese recipe, based on the principles of traditional Chinese medicine for scrambled eggs flavoured with sha ren powder prepared in a wok. This relatively simple stir-fry recipe is all about the flavour o Sha Ren, the fruit pods and seeds of Wurfbainia villosa, also known as Chinese black cardamom.
Ingredients:
5g of ground sha ren seed
3 eggs
salt, to taste
oil for stir-frying.
Method:
Beat the eggs to make egg flowers (ie break the yolks, but do not whisk fully tet), mix in Sha Ren powder and salt, beating more thoroughly this time.
Set a wok over medium heat then add a glug of oil. Once the oil is hot add the eggs and stir-fry until cooked. The continuous action of stir frying means that the eggs will be nice and fluffy.
According to the tenets of Chinese traditional medicine, this recipe could be used to control morning sickness.
