Ingredients


2 oranges
60ml (1/4 cup) honey
280g (2 cups) plain flour
70g (1/2 cup) oatmeal (not the quick cook variety)
1 tbsp baking powder
1 tsp salt
100g (1/2 cup) sugar
2 eggs, lightly beaten
160ml milk
5 1/2 tbsp butter, melted and cooled

Method:

Using a microplane grate off the zest from the two oranges and set aside. Using a sharp knife slice off all the remaining peel and pith from the oranges. Now trim the oranges so that they will fit the base of your muffin cups. Slice the oranges into 6mm (1/4 in) thick rounds and discard any pips (these slices should fit the base of your muffin cups).

Place 1 tsp of honey in the base of each muffin cup then sit an orange slice on top.

In a bowl, combine the flour, oatmeal, baking powder, salt and sugar in a large mixing bowl. Stir with a fork to mix then add the grated orange zest along with the eggs, milk and melted butter. Stir until just combined then spoon the batter over the orange slices, filling the muffin cups no more than 2/3 full.

Transfer to an oven pre-heated to 180°C (350°F, Gas Mark 4) and bake for about 20 minutes, or until a toothpick inserted into the centre of the muffin emerges cleanly.

Remove from the oven and allow to cool slightly. Serve warm.
