Ingredients:

1.5kg pork spare ribs
2 tbsp soft brown sugar
1 medium onion, grated
1 tsp ground ginger
1 tsp mustard powder
2 garlic cloves, crushed
2 tbsp tomato puróe
150ml orange juice
salt and freshly-ground black pepper
raw red onion rings, to garnish

Method:

Place the spare ribs in the base of a large roasting tin. Mix together the grated onion, ginger, mustard powder, garlic, tomato puróe and orange juice in a bowl, season liberally then pour evenly over the spare ribs and use your fingers to rub into the meat.

Transfer to an oven pre-heated to 200°C and bake for about 45 minutes, or until cooked through and slightly blackened. During this cooking time turn the ribs frequently and baste with the pan juices.

Serve hot.
