Ingredients:

200g light muscovado sugar
90g butter, melted
2 large eggs
4 ripe bananas, mashed
4 tbsp plain flour
1 tsp baking powder
2 tsp ground cinnamon
1 tsp ground ginger
60ml strong, black, coffee
250ml dulce de leche

Method:

In a bowl combine the muscovado sugar and butter. Whisk in the eggs then add the mashed bananas. Beat in the flour and baking sugar until smooth then add the cinnamon, ginger and black coffee.

Turn into a greased and floured springform cake tin then transfer to an oven pre-heated to 150°C and bake until set and lightly golden on top (the batter is thick, so the cake will bake quickly).

Allow to cool in the tin for 15 minutes then turn out onto a wire rack to cool completely.

Place on a serving plate or cake stand and cover with the dulce de leche mixture. Serve sliced into wedges.
