Spiced Biscuits is a traditional British recipe for a classic biscuit (cookie) of a batter containing currants and flavoured with spices that is dropped onto a baking tray and oven baked until done. Cream together the butter and sugar in a bowl until light and fluffy then add the beaten eggs a little at a time, mixing thoroughly after each addition. Add the spices and mix thoroughly.
Meanwhile, sift the flour and baking soda into a separate bowl. Mix-in the currants to combine then stir into the butter mix, alternating with a tablespoon of milk. The less milk you add and the stiffer the batter the more biscuit-like the final product will be. If you add more milk and make a softer batter you will get a more cake-like end product.
Drop the batter by the heaped tablespoon onto well-greased baking trays (leave about 5cm between each one) then place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 12 minutes, or until the biscuits are an even golden brown. Allow to cool on the baking sheet for 10 minutes then transfer to a wire rack to cool completely.
