In culinary terms, a goujon (from French: goujon [ɡuʒɔ̃] 'dowel', 'pin') is a strip taken from underside of the chicken breast, sometimes breaded or coated in batter and deep fried. Though for most common purposes it represents strips cut from chicken breasts.
Ingredients:
3 large, skinless, chicken breasts
2–3 eggs
Plain flour
Breadcrumbs (chunky and homemade preferably). If shop bought you may need ½ a tub or 2 bags depending on the size/type you’re buying. Southern fried seasoning
Method:
Pre-heat your oven to 180C (160C fan). Line a large baking tray with reusable non stick baking liner.
Slice your chicken breasts into pieces (you should get 6–7 strips from one chicken breast. Ensure they're of similar thickness or size so they’ll cook evenly.
Break the egg into a bowl and beat it. Add flour to a second bowl.
Spread a generous amount of breadcrumbs on a large plate and mix in a generous amount of seasoning. Mix to combine.
Coat/dip each piece of chicken first in the flour, then the egg, then dip in the breadcrumbs to coat. Arrange them on the prepared baking tray.
Transfer to the centre of your pre-heated oven and bake for about 25 minutes until they're crispy on the outside and cooked through.
