Ingredients:
300g broccoli florets, chopped
60ml mayonnaise
1 small onion, chopped
3 eggs, beaten
150g cheese, grated
300ml cream of mushroom soup (tinned is fine)
80g soda cracker or Ritz cracker crumbs
Method:
Bring a pan of water to a boil, add the broccoli to a steamer basket and cook for about 8 minutes, or until just tender. Turn the cooked broccoli into a large bowl then mix with the mayonnaise, onion, eggs, cheese and cream of mushroom soup. Blend thoroughly but carefully then turn the mixture into the base of a casserole dish (about 22cm square).
Crush the crackers either in a food processor or by bashing in a plastic bag. Even out the top of the broccoli mix then spread the crushed cracker crumbs on top. Transfer to an oven pre-heated to 180°C and bake for about 35 minutes, or until heated through and bubbling. Serve warm.
