Sourdough Pizza Crust

This is the recipe for another classic pizza dough made from a sourdough yeast starter rather than the usual standard yeast starter.

Ingredients:

360ml Sourdough Starter
4 tbsp olive oil
1 tsp salt
220g plain flour (approximately — you may need a little more or a little less to adjust the consistency).

Method:

Mix together the sourdough starter, 1 tbsp olive oil, the salt and the flour together (start with 180g flour and add more as needed) in a mixing bowl. Adjust the amount of flour until the mixture comes together to form a ball. Cover the bowl with a cloth and set aside to rest for 30 minutes (it probably won't rise during this time, but don't worry you want to relax the dough so it's easier to handle).

Turn the dough onto a lightly-floured surface and roll lightly until it's about 25cm in diameter. Transfer to a lightly-greased baking sheet or pizza sheet and using your thumb and forefinger pinch the edge of the pizza to create a raised lip then place in an oven pre-heated to 220°C. Part-bake for 7 minutes then remove from the oven.

Before you add any toppings to the pizza brush the surface with the remaining olive oil. Top as desired (classic Neapolitan Pizza Neapolitana or Pizza alla Marinara are excellent) then return to the oven and bake for a further 10 to 12 minutes, our until the crust is nicely golden and cooked through.
