Søt Suppe (Sweet Soup)

Ingredients:

3.4l water
140g raisins
140g currants
25 prunes
10 dried apricots
25 cloves
1 cinnamon stick
7 tbsp tapioca
700ml grape juice
180g sugar (less if the grape juice is sweet)
3/4 tbsp salt
120ml lemon juice

Method:

Roughly break up the cinnamon sticks and tie in a muslin bag along with the cloves. Place in a large pan along with the water and the dried fruit. Bring to a boil and cook, uncovered, for 25 minutes. Add the tapioca and stir to combine then continue cooking until the mixture is almost clear. Now add the grape juice and sugar and continue cooking until the tapioca is completely clear.

Keep stirring all the while then add the salt and remove the spice bag. Take off the heat and as it cools add the lemon juice. Serve cold in chilled bowls. You can also add a dollop of yoghurt or some ice cream before serving.
