Sombi (Creamy Rice Pudding)

Rice pudding is popular in Senegal, with many version being prepared. It's served as snacks (particularly for children), as an inexpensive meal and also as a dessert. This version, called sombi, is prepared with milk and curd (cottage) cheese.

Ingredients:

100g short-grain rice
a pinch of salt
5 tbsp sugar
3 sachets of vanilla sugar
100ml of unsweetened condensed milk
1 tbsp of orange blossom water
a knob of butter
small pinch of grated nutmeg
small pinch of ground cinnamon
100g of fromage blanc (milk curds)

Method:

Put 400ml (1 1/4 cups) water in a saucepan. Add the washed rice then cook over medium heat for about 20 minutes, until the mixture is dry.

Add the knob of butter and a small pinch of salt. Stir and then take the pan off the heat.

Add the condensed milk, fromage blanc, sugar, vanilla sugar, a pinch each of nutmeg and cinnamon as well as the orange blossom water. Mix thoroughly to combine.

Divide between two serving glasses and bring to the table.

Sombi can be served hot, it can also be cooled, refrigerated for up to 1 hour and served chilled.
