Smoked Cod Frittata is a modern British recipe for a classic starter of smoked cod boiled in milk that's flaked and cooked as a thick omelette with cheese and herbs and which makes an excellent starter dish (or even breakfast) for Christmas or Thanksgiving. The full recipe is presented here and I hope you enjoy this classic British version of: Smoked Cod Frittata.
Place the cod in a saucepan. Pour in the milk then add just enough milk to cover. Bring the mixture to a boil, reduce to a simmer and cook for 4 minutes.
After this time remove the cod with a slotted spoon then flake the flesh.
Crack the eggs in a bowl then beat together before stirring in the cheese, thyme and basil. Now add the fish flakes and stir thoroughly to combine.
Place a 25cm diameter frying pan on the heat. Add the oil and when hot pour in the egg and fish mixture. Cook over medium heat for about 10 minutes, or until the eggs are set.
Take off the heat then place under a hot grill (broiler) and cook for about 4 minutes, or until the top is just set and golden brown.
