These are traditional, quickly-made griddle cakes that are typically prepared for and served during breakfast and tea. They do not keep and need to be eaten almost as soon as they are prepared.
Ingredients:
240g plain flour
pinch of salt
70g butter
1 egg, beaten
hot milk
Method:
Sift together the flour and salt into a bowl. Dice the butter, add to the flour mix and rub in with your fingertips until the mixture resembles fine crumbs.
Add the egg and just enough hot milk to yield a smooth, elastic, dough. Turn the dough out onto a floured work surface and roll out to about 1cm thick.
Cut into rounds, re-roll the scraps and cut out more rounds.
Heat a griddle pan or heavy-based frying pan. Butter lightly and use to cook the griddle cakes for about 5 minutes on each side or until golden brown.
