St Kitts Coconut Dumplings is a traditional Kittitian and Nevisian recipe for a boiled dumpling made from a blend of coconut flakes, flour, butter and oil that's served as an accompaniment. Ingredients:
75g coconut flakes
200g wheat flour
¼ tsp salt
1 tbsp vegetable oil
1 tbsp butter
125ml water
Method:
Combine the flour, coconut, salt, butter and oil in a bowl. Gradually stir in water to make a stiff dough.
Turn the dough out onto a lightly-floured work surface and knead for about 2 minutes.
Cut of tear gofball-sized pieces from the dough. Roll into a ball then flatten into dumplings.If desired you can press dimples into the top and bottom surfaces with your thumb.
Bring a pan of lightly-salted water to a boil. Carefully slide in the dumplings one by one. Return to a simmer, cover the pan and cook for about 10 to 15 minutes until the dumplings are done.
Drain the dumplings and serve as an accompaniment.
