Sizzling Scallops

This is a slightly novel way of cooking scallops on the barbecue by breading them. The same technique also works well for scallops or even scampi.

Ingredients:

1 lemon
6 tbsp olive oil
salt and freshly-ground black pepper, to taste
12 scallops
115g fresh wholemeal breadcrumbs
60g butter, melted
lemon wedges, to garnish


Method:

Finley grate the zest from the lemon and mix with the olive oil in a small bowl. Season to taste then add the scallops, tossing to coat.

Cover the dish with clingfilm (plastic wrap) and set aside to marinate for 30 minutes.

When the scallops have marinated, place the breadcrumbs in a large bowl. Add the scallop meats, one at a time, then thread onto individual skewers soaked in a bowl of water for 30 minutes beforehand.

Drizzle over the melted butter then place the breaded scallops on an oiled barbecue rack set over medium-hot coals. Cook for about 4 minutes per side, turning half way through.

Serve garnished with lemon wedges.
