Sill Potatis (Pickled Herring with Boiled Potatoes and Sour Cream)

This homely recipe is considered one of the national dishes of Sweden and it consists of boiled potatoes, pickled herring pieces and a sauce (soured cream with flat-leaf parsley in this case). Often a hard-boiled egg, sliced is included, too.
Ingredients:
24 new potatoes pickled herring (about 6–8 pieces per person)
4 eggs
240ml sour cream
½ bunch flat-leaf parsley, leaves chopped
Method:
Add the potatoes to a large pan of cold, salted, water. Sit over medium-high heat and bring to a boil. Cover and cook for 20–25 minutes, until the potatoes are just tender. If desired, you can add the eggs during the final 10 minutes of cooking.
Drain the potatoes, crack and peel the eggs. Slice the eggs.
Remove the pickled herring from their brine.
In a bowl mix together the sour cream and parsley.
To serve plate out 4 new potatoes, 1 sliced hard-boiled egg, 6–8 pieces of pickled herring and 4 tbsp herbed sour cream per plate.
Serve immediately.
