Shuku-shuku (Coconut Biscuits)

Ingredients:

1 medium coconut, flesh grated and squeezed
3 egg yolks
50g caster sugar

Method:

Mix together the squeezed coconut, egg yolks and sugar. Form into small balls of about 2cm in diameter. Roll each ball in flour and place on an oiled baking sheet. Bake in an oven pre-heated to 170°C (325°F/Gas Mark 3), until golden brown.

Cool and store in air-tight tins.
