Ingredients:
4 medium-sized eating apples
Lemon juice
3 tablespoons packed brown sugar
2 tablespoons butter, melted
1/4 teaspoon ground cinnamon
1/8 teaspoon apple pie spice
1/8 tsp salt
8 scoops of ice cream, to serve caramel sauce
Method:
Wash and core the apples then cut in half lengthways and brush the cut sides with lemon juice to prevent browning. Use a sharp knife to cut a face on the cut side of each apple half (make certain this is a negative, a face cut-out).
In the meantime, combine the sugar, melted butter, cinnamon, salt and apple pie spice blend in a small bowl then brush this mixture all over the apples, ensuring that the face cutouts are filled. Place the apples, cut side down, in a baking dish then scatter the remaining sugar mix over the apples. Transfer to an oven pre-heated to 200°C and bake for 20 minutes, or until the apples are tender.
For each serving, place a scoop of ice cram in a bowl, drizzle with the caramel sauce, top with an apple half and serve.
