Shokolaadikook odrajahu (Chocolate Cake with Barley Flour) is a traditional Estonian recipe for a classic chocolate cake made with a barley flour batter containing walnuts and dried cranberries. The full recipe is presented here and I hope you enjoy this classic Estonian version of: Chocolate Cake with Barley Flour (Shokolaadikook odrajahu).
Combine the butter and chocolate in the top of a bain-marie (double boiler) and heat until completely melted. Take off the heat and set aside. Meanwhile, beat together the eggs with the sugar until stiff. Fold in the chocolate mixture then add the flour, chopped walnuts and berries. Mix carefully until just combined.
Turn into a 24cm cake pan that's been greased and floured then transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until cooked through (a skewer inserted into the centre should emerge cleanly).
Allow to cool then turn out of the tin, slice into wedges and serve. It goes well with vanilla-flavoured cream or cinnamon-vanilla cream. If desired you can coat the cake with melted chocolate.
