Shito (Ghanaian Black Chilli Sauce) is a traditional Ghanaian recipe for a classic chilli, onion, dried fish and shrimp powder sauce that's cooked down until black and thick. Shito is a popular pepper sauce that is most especially associated with Ghana and other West African countries. If green scotch bonnet chillies are used instead of red chillies you make Kpakposhito rather than shito.
Ingredients:
15 large onions
100g (1 cup) dried fish powder
100g (1 cup) dried shrimp powder
15 large fresh red chillies (habanero or scotch bonnet)
3 tbsp hot chilli powder
4 tbsp tomato purée
4 Garlic cloves
4 tbsp ginger, chopped
1 tbsp grated nutmeg
1 tbsp all-purpose seasoning
Vegetable oil
Salt, to taste
Method:
In a food processor blend together the ginger, garlic, and chillies.
Heat oil in a pan, add the chopped onion and fry for 2 minutes, until soft. Now pour in the blended mixture then stir in the tomato puree and chilli powder. Cook over medium heat, stirring frequently, for 20 minutes.
Add the powdered shrimp and fish powder, stirring to combine. Season to taste with salt then add the nutmeg and all-purpose seasoning. Continue simmering over low heat until the colour of the shito is a dark brown.
Take off the heat and set aside to cool. Transfer to a jar or bottle, pour in a little oil to prevent the air getting into the sauce, secure with lids and store.
