This is a modern British wild food recipe, based on the classic Greek dish, Spanakorizo.
Ingredients:
120ml olive oil
2 medium onions, coarsely chopped
1 red chilli, finely chopped
350g long grain rice
600ml water (or stock)
300g fresh sea aster leaves, washed and chopped
100g fresh dill, chopped
230ml yoghurt
salt to taste
Method:
In a deep saucepan heat the oil over a medium heat and add the onions until translucent (about 4 minutes) then add the chilli and the rice. Stir to coat with the oil.
Meanwhile, heat water or stock in a saucepan add the sea aster leaves and when the water begins to boil immediately pour over the rice. Stir well, season with salt, bring to the boil and cover. Reduce to a simmer and cook for 20 minutes until the rice is just tender.
Serve immediately, sprinkled with dill, and accompanied by a generous dollop of yoghurt on each plate.
