Scots Pine Syrup is a modern British recipe (from Alaska) for a classic sugar syrup flavoured with Scots pine tips and/or green pine cones that makes and excellent breakfast syrup. The full recipe is presented here and I hope you enjoy this classic British version of: Scots Pine Syrup.

Ingredients:
400g sugar
500ml water
200g young Scots pine tips, roughly chopped (or whole green pine cones)
Method:
Combine all the ingredients in a heavy-based pan. Gently bring to a boil, reduce to a simmer and cook gently for 5 minutes. Take off the heat and set aside to cool completely.
Once cold, strain the syrup and pour into a sterilized jar. Refrigerate until needed.
This makes an excellent breakfast syrup and is ideal for waffles and pancakes but also works well with ice cream.
