Ingredients:

4 fish steaks (hapuka, hoki, tuna, kingfish)
4 tomatoes, blanched and sliced
3 tsp malt vinegar
100g soft breadcrumbs
2 tsp finely-chopped onion
2 tbsp melted butter

Method:

Wash the fish steaks and pat them dry. Place in a baking pan and arrange the tomato slices on top. Sprinkle with vinegar.

Combine the breadcrumbs, onion and butter in a pan and spoon this mixture on top of the tomatoes and the fish.

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) for about 20 minutes, or until the fish is cooked through.
