Sautó Turkey Cutlets is a traditional British recipe (based on a French original) for a classic dish of fried turkey cutlets served with a herb, wine vinegar and bouillon sauce. The full recipe is presented here and I hope you enjoy this classic French version of: Sautó Turkey Cutlets.
Heat 3 tbsp butter in a frying pan, add the turkey cutlets and cook until browned on all sides. Add the parsley, thyme, bayleaf, garlic, bouillon and salt then season to taste. Bring to a simmer and cook gently for 5 minutes. After this time transfer the cutlets to a hot dish.
Mix the remaining 2 tbsp butter with the flour until smooth. Add the vinegar to the pan then whisk in the butter and flour mix. Allow the sauce to heat through, then pour over the cutlets and serve.
