Sautó Turkey Cutlets

Ingredients:

5 tbsp butter
8 turkey cutlets
1 parsley sprig, finely chopped
4 thyme sprigs, finely chopped
1/2 bayleaf
1 garlic clove, chopped
1 tbsp bouillon
pinch of sugar
1 tbsp wine vinegar
1/2 tsp plain flour
salt and freshly-ground black pepper

Method:

Heat 3 tbsp butter in a frying pan, add the turkey cutlets and cook until browned on all sides. Add the parsley, thyme, bayleaf, garlic, bouillon and salt then season to taste. Bring to a simmer and cook gently for 5 minutes. After this time transfer the cutlets to a hot dish.

Mix the remaining 2 tbsp butter with the flour until smooth. Add the vinegar to the pan then whisk in the butter and flour mix. Allow the sauce to heat through, then pour over the cutlets and serve.
