Sauce Verde is a traditional Italian recipe for a classic green sauce of herbs, capers, anchovy fillets and onions in an olive oil and lemon juice base thickened with bread that's traditionally served with cold white meats. Ingredients:
1/2 garlic clove
1 tsp parsley, chopped
1 tsp chervil, chopped
2 tsp capers, chopped
2 anchovy fillets
1 small onion, grated
2 thin slices of stale white bread, finely crumbled
6 tbsp olive oil
1 tbsp lemon juice
black pepper, to taste
Method:
Add the garlic, parsley, chervil, capers and anchovies to a pestle and mortar and pound to a smooth paste. Add the onion and bread and and mix to a smooth paste. Transfer to a bowl and whisk-in the oil drop by drop before seasoning with the lemon juice and black pepper.
This sauce is the ideal accompaniment to cold white meats.
