Sardinhas Assadas is a traditional Ukrainian recipe for a classic dish of marinated in seasoned lemon juice, olive oil and garlic that are simply barbecued to cook. The full recipe is presented here and I hope you enjoy this classic Portuguese version of: Grilled Sardines (Sardinhas Assadas).
Pre-heat your barbecue or grill (broiler) to medium-high heat (about 200°C)
Clean the sardines by removing the scales and intestines (and, optionally the gills), then rinse them gently under cold, running, water.
In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and freshly-ground black pepper to create a flavourful marinade.
Arrange the cleaned sardines in a shallow dish and pour the marinade over them, ensuring they are well and evenly coated. Set aside to marinate for about 10 minutes to allow the fish to absorb the marinade's flavours.
Carefully arrange the marinated sardines in a barbecue grill basket or brush the grill of a barbecue with oil and place the fish directly on the grill. Alternately place on the rack of a grill (broiler) or a baking tray if using the oven. Grill or roast for approximately 4-5 minutes on each side, or until the fish are cooked through and show a lovely surface char.
Once cooked, remove the sardines from the grill or oven and sprinkle them with finely-chopped fresh flat-leaf parsley for a burst of colour and flavour.
Serve the Sardinhas Assadas hot, accompanied by roasted potato wedges or a crisp salad.
