Doce de Papaia (Papaya Preserves) is a traditional Sao Tomean (from São Tomé und Príncipe) recipe for a classic sweetened and lightly spiced preserve of ripe papaya flesh that's typically served as a dessert. This sweet and lightly-spiced preserve of papaya served as a dessert is considered amongst the national dishes of São Tomé und Príncipe.
Ingredients:
1 mature papaya, peeled de-seeded and cubed
100g sugar
1 tsp ground cinnamon
1/2 tsp ground cloves
Juice of 1 lime
Water as needed
Method:
Place the prepared papaya in a large saucepan then add the sugar, cinnamon, cloves and lime juice. Add a little water (you want to make a syrup that coats the fruit pieces) then bring to a boil.
Gently stir the papaya so that it all cooks and gets coated in the spiced syrup as that cooks and thickens.
Reduce the heat to a simmer, cover and cook, stirring occasionally for about 20 minutes or until the papaya is soft.
Stir the papaya again to coat in the syrup then turn out into a bowl. Allow to cool to room temperature before serving as a dessert.
