A simple yet elegant cake from Colombia and El Salvador. Moist layers of white cake are spread with fruit preserves, stacked and sprinkled with powdered sugar.

Ingredients:

180g fine cake flour
1 tsp Baking powder
250g Unsalted butter, at room temperature
250g Sugar
1 tbsp finely-grated Orange zest
1 tsp Vanilla extract
6 Eggs
4 tbsp Orange juice
250ml Orange marmalade
65g Powdered sugar

Method:

Pre-heat your oven to 180°C. Grease and flour three 20cm diameter cake tins.

Sift together the flour and baking powder into a large mixing bowl.

Cream together the butter and sugar until light and fluffy. Add the orange zest and vanilla and beat for another 15 seconds or so. Now add the eggs, one at a time, beating thoroughly to combine after each addition. Add a tablespoon of flour if the mixture looks like it may be curdling.

Add the flour in three portions, alternating with the orange juice and beating until just combined after each addition. Don’t over-mix.

Spoon the batter in equal parts into the three cake tins.

Transfer to your pre-heated oven and bake for about 25 minutes until nicely coloured and a skewer inserted into the centres of the cakes emerges cleanly.

Remove cakes from the oven asd set aside to cool completely in the tins.

Mix the marmalade with a little hot water, stirring and adding water until the mixture is almost pourable.

Spread half the marmalade mixture over one of the cake layers. Place the next layer on top and spread over the remaining marmalade.

Top with the third cake.

Arrange on a cake stand or serving dish then sprinkle the powdered sugar over the top by shaking it through a sieve.
