Pastel de Tres Leches

Pastel de Tres Leches is a traditional Salvadorean (from El Salvador) recipe for a classic sponge style cake that's soaked over night in three milks and decorated with a whipped cream icing before serving. The famous cake of three milks, pastel de tres leches is believed to have originated in Nicaragua. It has become very popular throughout Central America and is becoming more and more common in the United States. This specific version comes from El Salvador.

Ingredients:

For the Cake:
180g fine cake Flour
1 tsp Baking powder
115g Unsalted butter, at room temperature
150g Sugar
5 Eggs
1/2 tsp Vanilla extract
250ml Whole milk
250ml Sweetened, condensed milk
160ml Evaporated milk

For the Whipped Cream Icing:
360ml Whipping cream
100g Sugar
1 tsp Vanilla extract

Method:

Pre-heat your oven to 180°C then grease and flour an 20×30cm baking tin.

Sift together the flour and baking powder into a large mixing bowl. Cream together the butter and sugar until pale and fluffy.

Add in the eggs one at a time, beating thoroughly to combine after each addition. Now add the vanilla extract and continue beating until foamy.

Carefully fold in the flour until thoroughly incorporated.

Pour the resultant batter into your prepared baking tin, smooth the top with a spatula then set in the centre of your pre-heated oven. Bake for 30 minutes, or until the top is golden brown and a skewer inserted into the centre emerges cleanly.

Remove from the oven and set aside to cool. Whilst still in the tin, pierce the cake all over with a fork or a skewer. Mix the three milks together in a jug then pour all over the cake.

Transfer to your refrigerator and chill over night so the cake has time to absorb the milks.

The following day, carefully un-mould the cake onto a serving plate. Now beat together the cream, sugar, and vanilla until the mixture holds in soft peaks. Use this mixture to decorate the cake then slice and serve.
