'Chitoumou' is the shea caterpillar (also known as the edible caterpillar), Cirina butyrospermi. Chitoumou are typically bought already prepared at the market. To prepare them, they are boiled with potash and then dried in the sun. This is a classic recipe from Burkina Faso that serves these edible caterpillars as a salad.

Ingredients:

1 head of lettuce, leaves separated rinsed and drained
2 carrots, cut into strips with a peeler
2 onions, sliced into strips
Salt
3 tomatoes, sliced into strips
1 handful of prepared chitoumou (shea caterpillars)
2 tbsp of vinegar
3 tbsp vegetable oil
1 tsp mustard
1 spoonful of Jumbo Aroma (bouillon cube)

Method:

Arrange the lettuce leaves in the base of a salad bowl. Arrange the onion strips, tomatoes and carrots strips on top.

Arrange the chitoumou over the vegetables.

For the vinaigrette dressing pour the vinegar and oil into a bowl. Beat with a whisk until emulsified then blend in the Jumbo Aroma, a little salt and a teaspoon of mustard. Whisk to combine and serve with the salad.
