Ingredients:
Juice of 1 orange made up to 250ml with water
80g raisins, chopped
120g rose hips and/or rugosa rose hips (weighted after removing the seeds and chopping)
2 tbsp melted butter
1 tsp vanilla extract
1 egg, beaten
210g plain flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
80g almonds, chopped
Method:
Combine the orange juice, raisins, rose hips, butter, vanilla and egg in a bowl. Whisk to combine then set aside. Meanwhile, sift all the dry ingredients into a bowl.
Add the dry ingredients to the liquid ingredients and mix well then gently stir-in the nuts (do not over mix, or the loaf will become heavy.
Spoon the batter into a well-greased 1kg loaf tin and place in an oven pre-heated to 170°C. Bake for about 60 minutes, or until the top is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.
Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.
