Rooibos Tea Bread is a traditional South Africa recipe (based on an English original) for a classic tea bread of a blend of sugar and fruit soaked in rooibos tea mixed with flour and an egg that's baked in a loaf tin and served at tea time. Combine the currants, sugar, raisins and mixed peel in a bowl. Pour over the cold redbush tea and stir to mix. Cover with a clean cloth and set aside to soak over night.
The following day, mix in the four, baking powder and egg to give you a cake batter. Turn this resultant batter into a well-greased 1kg loaf tin and transfer to an oven pre-heated to 150°C. Bake for about 90 minutes, or until the top of the loaf is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.
Allow the tea bread to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Serve sliced and accompany with butter and jam.
